RESUMO

The present study concerns the characteristics of the strategies formation process of four restaurants Quina do Futuro, Oficina do Sabor, Pantagruel e La Capannina from the year of their foundation to 2006. The questions of research had directed the development of this inquiry: a) how did occur the periods of continuity in the adopted strategies for organizations? b) how did occur the eventual periods of changes in these strategies? c) what did the executives learn regarding the strategic management throughout its careers? d) how this learning did mold the strategic management of these organizations? The fundamentals of this research includes the entrepreneurial school of strategies formation, strategical changes and executives learning. 14 involved people in the administration of the firmss had been interviewed. The analysis of the data happened in two levels, inside of each case and the cross case analysis, objectifying to verify similarities and differences between them. From the gotten data, it was verified that the phases of continuity and changes in the strategies adopted for the companies had presented characteristics of the entrepreneurial school. In its careers, the entrepreneurs had learned by means of its experiences, for relationship and for the demand of the work on questions of the strategic management. They had demonstrated more frequently apply these knowledge during the periods of changes. The learning on the external environment influences the strategies globally, whereas the knowledge gotten on the internal environment takes the most specific action
