RESUMO
The aim of this dissertation is to understand changes in the consumption of food in Cabo Verde, as from the second half of 1990 to 2005 decade, considering that part of the greater than ever changes in the eating habits of its population are influenced by the globalization process. Cabo Verde is a country that has always faced difficulties in agriculture and food production, given her weak productive base. Its climate associated with the scantiness of the soils, alongside historical factors, critically compromised food production and food security. Nourishment in the country is generally characterized by a shortage, because of a weak national production structure, particularly in the case of cereals which constitute the Cape VerdianÂs staple food. In order to attend to nourishment demands, the country always depended on importation and international food aid. Nowadays, some new changes took place, as a consequence of the liberalization process; as a result of importation, the local food supply started to depend on a wide variety of original products from other countries, although only accessible to a small fraction of its population. Based on empirical evidences, secondary sources, and considering the internal and external factors that are contributing to this course of changes, the general objective of this work is to understand its implications for food security. The fieldwork is based on interview with heads of middle-class familiesâ, especially those from the city of Praia, the countryâs capital, and direct observation of local supermarkets. Those families, because of their class background have easier access to new variety of products. Specifically this dissertation is aimed at understanding aspects of the globalization of food and its implications for development, as well as for food security, focusing on an insular country, Cabo Verde
