RESUMO

Four hundred and two strains of osmofilic yeasts were isolated from flowers, honey, beehive and honeycomb samples and examined for erythritol producing ability. Twenty two strains were found to be erythritol producers and two of these produced exceptionally high quantities. Of these, the strain which was classified as Trichosporonoides sp demonstrated the highest erythritol yield. The effect of temperature on the time course and erythritol yield was performed; the fermentation at 30°C and 35°C showed good results in both glucose and sucrose substrate. Comparative study of time course using glucose and sucrose substrate by Trichosporonoides sp at 30°C indicated that glucose was the carbon source more appropriate than sucrose for erythritol production.
