Pesquisa de microorganismos indicadores e patogênicos no filé de tilápia do Nilo (Oreochromis niloticus) e em diferentes pontos da planta de processamento

RESUMO

Nile tilapia (Oreochromis niloticus) is one of the most important species for aquaculture because of its easily adaption to farming in different production systems, delicate taste and texture. However, there are not many slaughterhouses for Nile tilapia in Brazil because the production is still small and targeted mainly to local trade. The purpose of this study was to search for indicator and pathogenic microorganisms in tilapia filets and in the processing plants in three slaughterhouses in Paraná, Brazil. The study comprised counts of aerobic mesophilic bacteria (AM), total coliforms (TC), Escherichia coli, coagulase-positive staphylococci (CPS) and the detection of Salmonella spp. and Listeria spp. Petrifilm™ plate system and the methodology recommended by the Ministério da Agricultura, Pecuária e Abastecimento was employed to make the analyses. The means of contamination for AM and TC in equipments were 3,77 CFU/cm² and 0,68 CFU/cm², in installations were 3,71 CFU/cm² and 0,56 CFU/cm², in workers’ hands were 4,88 CFU/surface and 1,79 CFU/surface and in final product were 3,95 CFU/g and 2,69 CFU/g, respectively. E. coli and CPS were detected in five and four samples, respectively, collected during processing. There was no statistical difference (p>0,05) among the different areas in the slaughterhouses for AM and TC counts but in total coliforms counts for water and installation sites (gutting, filleting and packaging areas). Salmonella spp. were not detected in any filet samples. Listeria spp. were detected in 5/291 samples analyzed, one L. innocua 6b and four L. monocytogenes 1/2c. The results for indicator microorganisms in the processing plants suggest faults in cleaning procedures and the presence of L. monocytogenes may pose risk to consumers’ health.
