RESUMO

Astrocaryum aculeatum Meyer, known popularly as tucumã or tucumanzeiro, is a palm tree that occurs in Amazon regions with a great diversity. It is used in many different ways. It also has a social economic importance for the local communities in specially because of the edible pulp extracted from this fruit. This work has the main objective to study the morphological and morphometrical aspects of fruits and seeds of this palm tree. Fruits were collected from a secondary forest in regeneration process. The fruit is a drupe, with longitudinal and transversal diameter that presents mean values of 53,31 and 50,34 mm respectively. Its form that varies from ovoid to globular shape and with less frequency subglobular. The dry matter shows mean values of 47,44 g, with the maximum mean value of 72,46g. When the fruits were mature showed green-yellow that may or pray not show craks in the epicarpo. The mesocarp represents 1/5 of the total fresh matter weight of the fruits end shows yellowish-orange color. Its fruit is fleshy and edible with a delicious taste and high values contents of lipids (25,19 %), carbohydrates (19,25 %) and reasonable amount of proteins (3,39 %), which contribute to its high caloric value ( 320 calories). It also contains high values of fibers ( 28,71 %) and reasonable mineral nutrients (88,09 mg of Ca; 85,72 mg of K), mainly micro nutrients (576,93 μg of Fe; 213,94 μg of Zn; 204,71 μg of Cu; 388,28 μg of Cr; 189,42 μg of Mn), which classifies this fruit with high nutritive potential. The pyrene has its form similar to the fruits, with longitudinal and transversal diameter values of 43,31 and 35,46 mm, respectively. The mean fresh matter of pyrene was 26,15 g, that represents more than half of the total fresh matter of the entire fruit; it presents three germinative pores that are set like vertices of a triangle that contains consistent woody thick fibers. The seed has a globular shape with brownish color surface with protuberance and white endosperm. The embryo is small, straight and cylindric.
