RESUMO

The temperature is one of the main factors that affects the fruit’s life after harvest. Increasing the temperature, speeds up the metabolism of the fruits, taking them to faster deterioration. One of the best ways to prevent the fruits of this kind of damage, is to apply the pre-cooling immediately after harvest, and to control the temperature during its storage. To consider and/or to use a better technology of pre-cooling of perishable products, it s necessary the knowledge of the physical processes that occur during this cooling. This can be done experimental yor through mathematical tools. In this research, it was chose the second alternative and the air forced pre-cooling was numerically simulated by using the mathematica1model that describes the heat transfer process, based on the Fourier s law, wrote in sphericalco-ordinate and simplified to describe a one-dimensional process. For the resolution of the equation, present in this mathematica1model, an algorithm based on the explicit scheme of the numerica1method of the finite differences, was implemented and run in the scientific computation programmer MATLAB 6.1. The mathematical model validation was made from the comparison of theoretical data with data gotten inexperiments where strawberries were submitted to the air forced pre-cooling under differents treatments. It was necessary to fit one of the physical parameters, that was the convection heat transfer coefficient (h). Finally, from the comparison between the numerical data and the experimental ones, it can be concluded that the methodology of the numerical simulations can be considered promising, as a tool that gives support to decision in the use and the equipment development for air forced pre-cooling of spherical fruits.
