RESUMO

From all substances employed as synthetic antioxidant in foods, the most used are the butyl hydroxyanisole (BHA), butylhydroxytoluene (BHT), propyl gallate (PG) and the tert-butylhydroquinone (TBHQ). These are substances whose use in foods has been approved, after inquiries that had proven their security within an acceptable daily intake (ADI) limit. Thus, they are either controlled by the specific legislation of each country or by international norms, requiring analyses to guarantee that they are being used within legal limits. In this paper, there has been optimized and validated a methodology for separation and simultaneous determination of the most used synthetic antioxidant substances in Brazilian industry (BHA, BHT, OG, PG and TBHQ), by high performance liquid chromatography (HPLC) with UV detector. The use of C18 column with mobile phase consisting in methanol and acidified water allowed the separation of 5 antioxidant substances in a chromatographic analysis of 20 minutes. The methodology revealed itself efficient with recovery rates above 90% for all antioxidant substances studied. Besides good linearity, the detection limits were of 3.09, 4.96, 1.13, 0.61 e 2.3 for BHA, BHT, OG, PG and TBHQ, respectively. The method was applied in samples of vegetal oil (canola, sunflower, maize and soy) and hydrogenated fats, demonstrating its applicability to this type of food. For vegetal oils the only antioxidant substance found, in some marks only, was TBHQ. In hydrogenated fats, in the other hand, the presence of BHT was detected. None of the analyzed samples revealed illegal antioxidant after Brazilian legislation, and, in quantitative terms, the rates stayed below maximum limit allowed, demonstrating that when this branch of Brazilian industry uses these additives, it is keeping at safe levels the use of these antioxidant substances.
