RESUMO

The aim of this research was to evaluate the behavior of the soybean oil packed in Tetra Brik (without nitrogen atmosphere), compared to traditional cans (with or without nitrogen atmosphere), regarding their oxidative rancidity under ambient storage conditions during a period of 12 months. The additional determination was done after 18 months of storage. In this period of evaluation the average temperature and relative humidity at the storage room were 22.7°C and 60.7% respectively. The samples were open monthly for a product stability follow-up through determination of peroxide index, anisidine value, as well as TOTOX value and percentage of conjugated diene. The sensorial tests were conducted after 6, 8, 10, 12 and 18 months of storage. The sensorial method applied consisted of assessing the packed soybean oil in the packages under study against a sample in can with nitrogen atmosphere that was stored at -20°C to be used as standard. The sensorial method has determined of the shelf-life of the product in any of the packaging systems used. After 8 months of storage, the sensorial panel identified a significant alteration (p=0.05) in three packed soybean oil in relation to reference sample. Both in the physical-chemical and sensorial determinations, the cans under nitrogen atmosphere presented lower results when compared to the Tetra Brik system and the can without nitrogen atmosphere, providing, thus, a better protection to the product. Among the physical-chemical parameters evaluated, the index of peroxide and TOTOX value were the most suitable for the stability of the soybean oil. High linear correlations were obtained between these parameters and the sensorial results
