RESUMO

The maln objectlve of this work was the development of the thermometric titration technlque and a trial of its applicatlon in the determination of acid compounds in wines. In this study the following topics were developed: 1. Application of the thermometric alcalimetric titration in the determination of the "total acidity" in wines. The results were compared with the ones obtained by potentiometrlc titration, which is the official method for this analysis. 2. Application of the thermometric alcalimetric titration curve described above in the determination of polyphenols (tanins) in wlnes. The results were compared with the ones obtained by permanganate titration, which is the official method for thls test, as well as with other alternatlve methods. 3. Application of cathalitic thermometrlc titration in the strong base titration of acid compounds in wines. 4. A trial was made to combine the results of the cathalitic thermometric titration and the conventional one to elaborate a new method for the determination of polyphenols in wines. The results are always compared with the ones obtained by officially accepted methods for this kind of analysis.
