Chenopodium quinoa (quinoa) seeds are a rich protein source and well-known for their high saponin content. Chemically, quinoa saponins are triterpene glycosides being phytolaccagenic, hederagenin, oleanolic and serjanic acids the most common aglycones found in seeds.
