RESUMO

Aiming to physically and chemically analyze the agroindustrial residue (peel) of three passion fruit species, yellow sweet passion fruit (maracujà amarelo doce â MAD) passiflora alata curtis, yellow sour passion fruit, (amarelo azedo â MAA), passiflora edulis f. flavicarpa, purple sour passion fruit (roxo azedo â MRA), passiflora edulis sims, among these species, it was chosen the most appropriate for the production of passion fruit peel flour, farinha da casca do maracujà (FCM), which was the species MAA, this was applied in the experiment âin vivoâ, investigating the effect of its consumption, associated or not to a programme of 60 days physical exercises (swimming), in search of dislipidemy control in female Fisher rats. Amongst the passion fruit species it was analyzed the weight of the fruit, the equatorial diameter (E), longitudinal (L) and the width of the mesocarp and/or the âpeel thicknessâ, weight of the seed, weight of the pulp, weight of the peel, and on the passion fruit peel flour weight, it was analyzed: wetness, protein, ether extract, fibers, ashes, acid detergent fibers (FDA), neutral detergent fibers (FDN), hemicelluloses, pectin and feed fiber (total, soluble). The experimental animals were fed on hipercolesterolemic diets, on these ones following analyzes were made: a) seric and serologic ones (glucose, CT, HDL-c, LDL-c, VLDL-c, TAG), b) hepatic tissues (CT, TAG and total lipidium), c) hepatic weight and fecal excretion. The main result indicate that: a) The yellow sour passion fruit, (amarelo azedo â MAA), as the most indicated to the production of FCM; b) The consumption of passion flour peel flour (FCM), presented better relation HDL/(LDL-c + VLDL-c), in animals which were fed on the hipercolesterolemic diets, being these also responsible for the higher levels of HDL-c in animals which had the intake of FCM, as well as it showed efficient for increasing the fecal volume; c) The physical exercises has shown more effective for rising the high level lipoprotein (HDL-c) and on the maintenance of a lower hepatic weight; d) parameters such as the CT (serologic and hepatic), LDL-c and seric glucose, were not influenced by the intake of passion fruit peel flour by the physical exercises
