Evaluation of environmental and security conditions for restaurants from University of State of Rio de Janeiro / Avaliação das condições ambientais e de segurança das cantinas da Universidade do Estado do Rio de Janeiro

RESUMO

The purpose of this research is to evaluate both environmental and security conditions of ten restaurants located at João Lyra Filho Pavilion in the University of the State of Rio de Janeiro. The research was developed between August 2006 and September 2007, and the restaurants were evaluated through a specific number of visits. A questionnaire has been elaborated based on the appropriate legislation overcoat the resolution RDC 216/2007 from ANVSA, and it was put into practice too. The sixty-one questions referred to the following points: edification; installations; equipments; movables and tools; the hygienic of installations and equipments; pest control; water supply; manipulators; raw material; food preparation; electricity precaution; burning prevention; handling and discarding of the residues and the workers security and health. We observed that some aspects arent on according to the legislation, such as: there is no exclusive lavatory for was hinghands in the manipulations space, and in those places, in general, there is not much ventilation so, its very warm; most of the restaurants havent pests barrier; the workers dont have appropriate uniform in half of restaurants; discarded gloves are used by few workers; the utensils where food are displayed arent sterilized and the foods storage isnt adequate; there is no specialized maintenance for the equipments; there are many equipments connected into the same electric point; the burning extinguishers arent sufficient and they are not corrected localized; there is no training of burning combat and prevention; the workers dont discard the residues correctly; there is no risk map; there is no first aid materials as well as the absence of workers health control. One of the most important recommendations is a creation of a specialized Department inside the University to control, in a regular basis, the sanitary and environment conditions. We hope to have collaborated with the University in order to elaborate some security and environment directions.
