RESUMO
This work present a evaluation of conditions to implementation of HACCP system in a poultry abattoir. Was conduced any visits to abattoir unit to knew their work reality and to acquired fundamentals informations for diagnostics elaboration and cleanly steps description to poultry obtaining. In second phase would evaluated the real conditions of abattoir processing, detecting the indispensable adequation of any steps and recommended indispensable modifications as mean to HACCP implementation in abattoir. It was possible evaluated the conditions for HACCP system implementation in the abattoir focus of this work according to Law 46/98 of Brasilians Ministério da Agricultura Pecuária e Abastecimento and elaborate a proposition of HACCP system to congelate and seassoned poultry line.
