Estudo da produção de dextrana de baixo peso molecular por via enzimatica, para obtenção de ferro-dextrana

RESUMO

The production of low molecular weight dextran during enzimatic reaction with raw dextransucrase from Leuconostoc mesenteroides NRRL B-512 F in different concentrations of sucrose and maltose as acceptor was studied. In the absence of maltose, the increase of sucrose concentration resulted both low molecular weight polysaccharide and native dextran formation. The product was very heterogeneous and with the increase of sucrose concentration, the yields of total dextrans decreased. Using maltose as acceptor, it was observed an increase in the production of low molecular weight dextran, proportionally to the increase of the R ratio ([maltose]/[sucrose]) and sucrose concentration. The yields of total dextrans was higher than that obtained in the absence of maltose. The best result was obtained with a sucrose concentration of 300 g/l and 6 g/l of maltose (R = 0,02). The dextran yield was 77%, with 86% of the product misture corresponding to a low molecular weight dextran with an average molecular weight near to 4.000 daltons
