RESUMO

The aims of this work were to study the temperature and ethanol concentration effect on the kinetics parameters ofthe cell growth and death, as well as the glucose consumption and the ethanol production by Sacchraromyces cerevisiae. Also the behavior of a pilot bioreactor with cell recycle, using industrial feed was evaluate. The constant searching for productivity in the distilleries has been leading the researches to develop new techniques to the alcoholic fermentation. One of the most promissor is the continuous operation with high cell concentration in the culture medium, obtained by cell recycle through tangential microfiltration. Therefore, many temperature oscillations in the industrial bioreactors, caused by strong climate variations, can alter the foreseen behavior of these processes. Thus, a better evaluation of these effect can be useful in future optimization an control studies. The studies on the influency of temperature and ethanol concentration in the cell death rate were performed at temperatures from 28 to 37°C and 65 to 110 g ethanol. The results obtained showed that the death constant Kd (T,P) increase as the temperature end ethanol concentration raise.
