RESUMO

In this work, Pleurotus sajor-caju PS2001 was cultivated in solid-state, in a medium formulated with sawdust of Pinus spp and wheat bran, to which had been added cupric sulphate, manganese sulphate and ammonium sulphate. Different treatments had been made with these salts, aiming at the solid cultive medium otimization for attainment of bigger productivity in the commercial production of mushrooms. In the first stage of the work a method was developed that was adequate to quantify indirectly the fungi mass indirectly. This method was based on the amount of chitin of the fungi wall which was estimated by the evaluation of the free N-acetilglucosamine concentration released for enzymatic hydrolysis. Different treatments had been considered following the methodology of Box-Wilson, who indicated the amounts of salts ideals to the medium, which allowed an increase of up to three times in the content of fungus mass during the first 15 days of growth. The treatments had also shown to favorable variation for the secretion of lacases and manganese peroxidases, indicating the potential use of these mushrooms also for the production of these enzymes and purpose of biorremediation. Additionally, one evidenced that the phenol addition to the cultive medium favors the production of fungus mass as well as the secretion of lacases and manganese peroxidases.
