Compostos bioativos em mangas (Mangifera indica L.): influÃncia da cultivar, do estÃdio de maturaÃÃo e do tratamento pÃs-colheita

RESUMO
The mango, considered a great source of antioxidants, is generally harvested immature and submitted to postharvest treatment. In order to evaluate the efficiency of these treatments on the cultivars and on the maturation level of their bioactive compounds, an experiment was carried out with the most consumed cultivars of the State of Pernambuco: Espada, Rosa and Tommy Atkins. Three batches of immature fruits of each cultivar were harvested and submitted to postharvest treatment, with mature harvested mangos used as control. The fruits were analyzed before and after treatment for the following parameters: weight loss, humidity, pH, acidity, total soluble solids (TSS), starch content, bioactive compounds (fiber by enzymaticgravimetric method, phenolics by spectrophotometry and carotenoids by chromatography and UV spectrophotometry) and antioxidant activity (by the β-carotene/linoleate model system). The results demonstrate the efficiency of the criteria used at harvest time and, regardless of the registered differences among the cultivars, maturation stages and postharvest treatment, mangos are a great source of dietary fiber, mainly soluble fibers and carotenoids, despite presenting a reduced content of phenolic compounds. The prevalence of xanthophylls was also noticed, being violaxanthin the main carotenoid followed by β-carotene and neoxanthin. The ethereal extract of the mature Rosa mango pulps showed a considerable antioxidant activity, significantly superior to the other cultivars
