Celulite aviaria : estudo do problema em um abatedouro comercial

RESUMO

Avian cellulitis is a identified disease in the slaughterhouses, in the majority of the times, and it comes being pointed as one of the main condemnation causes of the carcasses in countries with developed aviculture. In Brazil, this infection was recently enclosed as one another category in the spread sheets of condemnation in the cornrnercial slaughterhouses. However, there are few specific studies on their characteristics and for this reason cellulitis is still confused with other infections for the Federal Inspection. A great number ofbacteria have been associated with this disease, being E. coZithe most frequentoThe objective ofthis work was the characterization of cellulites lesions presents in poultry of a cornrnercial slaughterhouse of São Paulo, through macroscopic analyses, microbiological and some physicochemical analysis. The lesions were located in the area of the chest, c1ose to the navel and they were identified for the yellow-brownish color, receiving the classification of cellulite "type 1" moderate. Of the forty-seven analyzed carcasses, E. coZiwas isolated in 31,91% of the lesions, and in 38,30% of them E. coZi was present in the heart and in 31,91% in the liver. The medium pH ofthe chest ofthe birds with lesions carne inside of the strip of pH of chest of healthy chickens, around 5,7 to 5,9. During the period of collection ofthe samples, from July to September of 1998, the cellulite was not considered as a condemnation category in the slaughterhouse in study, however, registrations of total and partial condemnations due to the cellulitis already existed in other slaughterhouses of São Paulo. These indexes were relatively mal1compared to the other infections, fact that can be explained by the bad knowledge and popularization of the disease in study. Therefore, the characterization of the lesions is an important subsidy to aid the veterinarians and agents of the Federal Inspection in the recognition of the same ones in the slaughterhouses, and the possibility of systemic infection in these chickens should be considered for the decision of partial rejection or total conrndenation
