RESUMO

To evaluate the performance and carcass composition of non castrated and castrated bovines in different ages, slaughtered at 27 months of age, this experiment was conducted in Alfenas, Minas Gerais, using 135 Nelore male bovine, weaned at eight months of age, wich were blocked by weaning weight and allocated into the following treatments: T1 - non castrated animals; T2 - animals castrated at eight months of age and T3 - animals castrated at fifteen months of age. The castration were done by surgery and the animal pre and post-chirurgical behavior was observed. The animals where kept under pasture conditions until 23 months of age and after this age, on feedlot. The animals performance were evaluated by the weight gain. Castration did not affect this characteristic (P >0,05). After slaughtering the carcass yield, fresh carcass weight, cold carcass weight, thawing losses (TL), percentages of muscle (PM), fat (PF) and bone (PB), the relationships muscle+fat:bone, muscle:bone, percentages of forequarter (PFq), saw cut (PSc) and side (PS) in carcass, Longissimus dorsi area (LDA), fat cover (FC), weight of commercial cuts and metabolic organs were evaluated. Were found differences (P <0,05) for PFq: 41,67%, 37,97% and 39,18%; for PSc: 45,67%, 48,53% and 47,68%; for PS: 12,67%, 13,50% and 13,13%; for PM: 69,75%, 61,40% and 63,78%; for PF: 7,90%, 12,69% and 13,63%; for PB: 22,35%, 25,90% and 22,59%; for TL: 3,46%, 2,69% and 3,11%; for FC: 0,9mm, 3,7mm and 3,0mm; for LDA: 66,3cm2, 58,4cm2 and 60,0cm2 and weight of commercial cut .acÃm.: 12,44kg, 9,44kg and 10,82kg, respectively for T1, T2 e T3. The castration did not affect the other evaluated characteristics (P >0,05). It can be concluded that it is not necessary to castrate Nelore bovines if they are slaughtered at 27 months of age, but, if the market pays based on carcass quality, the castration at fifteen months of age may be recommended.
