RESUMO

The present study was undertaken in order to obtain informations about Bullfrog (Rana catesbeiana)in terms of its carcasse composition and the chemical alterations in muscle during frozen storage at -18ºC for 182 days period. The proximate and the aminoacid composition of a meal prepared with visceras and head which represent 24% of the total weight at slaughter was also assessed. For comparison, it was determined the fresh muscle composition of Leptodactylus labyrinthicus and Leptodactylus occelatus species wich are very appreciated by the Brazillian consumers
