RESUMO

The technological progress of the alcohol industry in Brazil in the decades of 70 and 80 was the result of the "Próalcool" program, developed by the Brazilian government to substitute gasoline, derived from petroleum, by ethanol. Brazil has then become the largest ethanol world producer by fermentation. Because there is a great difficulty in maintaining a constant temperature during industrial alcoholic fermentation, the majority of the kinetic studies found in the literature, which are based on an isothermical process, can lead to errors when used to describe the dynamic behavior of an industrial plant. This is why the study of the effect of the temperature in the kinetic parameters that describe cell growth and death, substrate consumption and ethanol production is important to the development of efficient control strategies in the alcohol industries. The objective of this work is to obtain a kinetic model considering the effect of the temperature in the alcoholic fermentation with high cellular density, besides authenticating kinetic and conversion parameters considering the inhibitory effect of biomass, substrate and ethanol in the fermentation process. Experiments were performed in batch and extended fed-batch mode using 6DFFKDURP HV_ FHUHYLVLDH in a temperature range from 28 to 40ºC. Sucrose, glucose, fructose and ethanol concentrations were measured by HPLC, dry cell weight was measured by gravimetry and viability was measured by microscopy. The obtained kinetic model described the fermentation process well in the temperature and cellular density range considered. Simulations were performed to analyze the dynamic behavior of the process in many different conditions. Process simulation and optimization have shown that high yield, conversion and productivity were attained in temperatures from 28 to 34ºC with dilution rates from 0.08 to 0.13h-1. Yield, conversion and productivity higher than 90%, 0.93 and 8.5 g/L/h, respectively, were attained.
