Influence of temperature and time during malaxation on fatty acid profile and oxidation of centrifuged avocado oil

Abstract Virgin oil from avocados (Persea americana Mill.) is obtained by mechanical processes after pulp malaxation at temperatures that minimize oxidation and improve separation.
