3. The effect of bioactive components of plant origin on the physicochemical and sensory characteristics of functional sausages
Abstract The aim of this study was to determine the effect of bioactive compounds of natural origin on the quality of sausages. Four variants of sausages were manufactured: a control variant (C) and three variants with the addition of catuaba, galangal, roseroot, maca, guarana and polyfloral honey (E1, E2, E3). The pH values, colour and chemical parameters

4. Effect of linseed oil sediment in the diet of pigs on the growth performance and fatty acid profile of meat
ABSTRACT The objective of this investigation was to examine the influence of dietary linseed oil sediment on the growth performance and fatty acid composition in the muscle tissue of pigs. Sixty-eight crossbred Swedish Yorkshire × Norwegian Landrace pigs were allocated to two trials with two different levels of linseed oil sediment. Twenty-four pigs in Tria

6. Successful Identification of Duck Genome Region Determining Desirable Uniformity of Meat Performance Traits
ABSTRACT The objective of this study was to identify genome regions determining duck meat performance traits with possible small variation. In total, 368 crossbred ducks of F2 generation obtained from two parental lines: Pekin-type ducks of Polish origin (A55) and Pekin-type ducks of French origin (GL-30) were recorded. The following seven traits were analyz

7. Occurence and antimicrobial resistance of Arcobacter species in food and slaughterhouse samples
Abstract The objectives of this study were i) to isolate Arcobacter species (Arcobacter butzleri, Arcobacter skirrowii, Arcobacter cryaerophilus) from different foods and sources, ii) to verify the isolates by multiplex PCR assay, iii) to detect the antibiotic resistance profiles of the isolates. In this study a total of 60 Arcobacter isolates were obtained.

9. Occurrence and characteristics of extended spectrum beta-lactamases-producing Enterobacteriaceae from foods of animal origin
Abstract Presence of extended spectrum beta-lactamases (ESBL) in bacteria is a growing health concern of global significance. The local, regional, national, and international epidemiological studies for extended spectrum beta-lactamases-producing Enterobacteriaceae and their encoding genes in foods are still incomplete. The objective of this study was to det

10. Widespread distribution of CTX-M and plasmid-mediated AmpC β-lactamases in Escherichia coli from Brazilian chicken meat
The dissemination of plasmid-mediated antimicrobial resistance genes may pose a substantial public health risk. In the present work, the occurrences ofblaCTX-M and plasmid-mediated ampCand qnrgenes were investigated in Escherichia colifrom 16 chicken carcasses produced by four commercial brands in Brazil. Of the brands tested, three were exporters, including
