RESUMO

Due to the increasing exigencies of the consumption market, mainly the extern one, the fruit production industries have the necessity to obtain environmental labels certification, of quality and insurance of the product or of the production system, seeking to enlarge their competitivity to maintain themselves on the market and to conquer other more demanding markets. There are several governmental or private labels, each one with its own protocol, aiming specific level or segment to be attained, such as the HACCP Hazard Analysis and Critical Control Point, PIF Integrated Fruit Production, EurepGAP Euro Retail Good Agricultural Practices, BRC British Retail Consortium and Natures Choice. The economic production of high quality fruits has given preference to more secure ecological methods, decreasing the use of pesticides, using traceability systems, involving social and environmental values in production, the well-being of workers and animals, and the preserving of biodiversity, with the objective of providing more safety to the consumer and the decrease of environmental pollution. To obtain the certifications, the industries have dedicated to accomplish the requisites that are imposed by the protocol of the claimed label and perform isolated and punctual actions which increase the cost due to the introduction of new proceedings in the work, auditoria and monitoring plans that werent used until now. This work proposes the establishment of a Environmental Management System in the Fruits Sector in all productive chain and, through a well planed and conducted systemic approach, increase the productivity and to optimize the level of efficiency of the procedures. The reduction and prevention of pollution and the identification of the wastefulness due to the loss of materials, energy and products, is an attempt to decrease the production cost and fulfill the labels requisites for the consequent certification. After the analysis of the interlacement between the requisites claimed by the labels, the items from rule NBR ISO 14001 and the identification of aspects that cause environmental impacts and wastefulness in apple industry, through environmental valuation; the aspects, pesticides consumption, water consumption, energy consumption and organic residues linage were chosen as the more relevant to be worked. After bibliography and technology research, a proposal of environmental protection economically viable measures was elaborated aiming to decrease the selected aspects such as : pesticides applying with low and ultra-low volume, decreasing irrigation water and reuse water in Packing House, rain water catching system, the use of biologic control and resistant cultivars, substitution of the chemical products used, wetlands construction, filter strip use, drainage of soils with excessive humidity, the use of precision agriculture, installation management to decrease energy consumption through substitution and establishment of equipments, daily monitory and worker consciousness; logistic and storage management; ethylene concentration control in storage by AVG (Aminothoxyvinilglycine) treatment in orchard, ionization use and MCP (1-metilciclopropeno) use in cold storage; transport and trading management, and industry fruit profit
