Qualidade do leite pasteurizado no comercio varejista na região de Campinas-SP

RESUMO

With the objective of evaluation the quality of the fluid milk sold on the retail market, 152 samples of pasteurized type "B" and "Especial" milk, were analyzed including all the commercial brands available in the area of Campinas - SP - Brazil. The resul ts of the determinations of volume in the plastic bag, specific gravity, titratable acidity, ash, freezing point, alkaline phosphatase and total microbial contamination, allowed one to conclude that the maximal volume found in the bag was 1.000 mL, with 56.58% of the total below this value, and an overall average of 989 mL. The specific gravity and the titratable acidity were within the normal range, with average values of 1.032 and 0,16% for specific gravity and acidity respectively. These averages were very close to the expected values however there were great variations, indicating deficiencies in the quality control at the industrial level, of the "Especial" type milk. With respect to total solids, besides the variations, it is important to note that the values from the gravimetric method were lower than those calculated by the Ackermann disk. For the freezing points and ash contents, there were extreme values far from those normally expected, indicating possible adulterations of the milk. The phosphatase test detected that 7.9% of the milk samples were phosphatase positive, which 15 a very important indication of health hazards. With respect to the microbiologial results, there were wide variations between commercial brands, milk types and from one day to another, indicating great deficiencies in the microbiological quality of the pasteurized milk. As a final conclusion the importance of a quality control system was emphasized, which could oblige the commercial, industrial and production sectors to meet the quality standards set at the consumer level.
