RESUMO

Approximately 700 mg of ochratoxin A were produced in a system consisting of Aspergillus ochraceus and five varieties of dry beans (Phaseolus vulgaris L.) in order to assess the ability of this substrate to support the bioproduction of the mycotoxin. Samples of the varieties Preto, Branco, Rosinha, Roxo and Rajado (22% humidity) were inoculated (2.65 x 10 spores) and incubated at 28°C for 28 days. One fourth of the lots were intact kernels, 1/4 decorticated kernels and the remaining 1/2 were beans which were previously gamma irradiated (1 MRad). It was shown that the common bean does not only support growth and bioproduction of ochratoxin but it is a highly stimulatory substrate. (...continue)
