RESUMO

The promotion of healthy practices is marked by public policies for food and nutrition as a strategy for prevention and control of non-transmissible chronic diseases - DCNT, fit the nutrition transition by passing the Brazilian population. This connection is based on the "Global Strategy on Diet, Physical Activity and Health" the World Health Organization - EG / WHO, 2004. Studies in several countries highlighted the occurrence of DCNT in increasingly early age and the Instituto Brasileiro de Geografia e Estatística IBGE - in Brazil indicates that 18% of adolescents overweight and have other 2.3%, obesity. In that sense this study presents the results of qualitative research that identified and examined factors trainers and adaptation of food preferences of a group of teenagers from a public school in Salvador, Bahia, seeking to understand how these factors balises eating practices of this group. The sample was composed of 36 adolescents, 12 to 16 years, registered the 7th to the 9th year in a municipal school. The study, conducted from May to July of 2008, adopted the participatory observation, the narrative writing and in-depth interview as procedures for data collection. To analyze the material used the technique of analyzing the content, including thematic analysis and analysis of interpretative statement, with procedures for categorization, inference, description and interpretation. The results suggest that the food preferences of adolescents are associated with multiple factors of training and of adaptation. Have synergy with the place, the time, the company and age and therefore are: (1) different between individuals, (2) share internal dimensions, through the "factors trainers" - hereditary, senses of taste, the desire of pleasure, health and emotions, and (3) external dimensions, through the "adjustment factors" -family, peers, communication network and the conditionalities desirability, body aesthetics, social status, environment. The study found that while the preferred sensory aspect is the predominant factor in food choices, it is also conflicting factor when the need to serve the pleasure of taste should be equated with the need to meet the requirements of good health and nutrition. Another conflict was found when the teenager is ahead of the choice between food that give you the taste and pleasure for those learned under home with his parents as foods "are good for health! Do grow. In this sense the pleasure creates conflict with the duty to return for respect, care, affection, assurance of security that are offered and give strong influence of family values. It follows from the findings that the factors related to the food preferences of adolescents should be better known in order to stimulate action reflective of educators, nutritionists and parents so that everyone can feel co-responsible for building an atmosphere promoter of learning that can foster the group free food choices so conscious and enjoyable.
