RESUMO

This work has been developed in a fruit pulp industry, in Espírito Santo, since the beginning of its activities. Diagnoses were realized in order to evaluate the industry adequation level related to Good Manufacturing Practices and to allow the planning of necessary actions to implement this tool of food safety. The first diagnosis occured in April/2008. A check-list was used to guide the diagnosis. Itens evaluated were classified in five groups, and each group received a punctuation (level of conformance). The most important non-conformances were photographed. 151 itens were evaluated: 98 were considered conforms and 53 non-conforms. The level of conformance was 65%. Based on this result, action plans were established to eliminate the non-conformances detected. To guarantee the success of the planned actions, the monitoring of the fulfilment of the actions was done with the responsible ones, through meetings and periodic checking. During these meetings it was possible to detect the reason why some planned actions were not achieved, and to review the implementation deadlines. In parallel, all the workers were trained and the obligatory documentation developed. The final diagnosis was realized in December/2008, following the same methodology used before. 154 itens were evaluated: 132 were considered conforms and 22 non-conforms. The level of conformance was 86%. The evolution of the level of conformance through the eight months of implementation was considered satisfatory, since many actions executed required investiments. It is also important to remember that the implementation of this kind of tool does not occur in a short period of time, since this is a continuous work.
