Ganho compensatório de suínos em crescimento e terminação e seus efeitos na qualidade da carne

RESUMO
Compensatory growth is observed when animals are submitted to a period of food restriction, followed by ad libitum feeding. These animals exhibit accelerated growth when compared to animals continuously fed ad libitum. The weight gains are associated to an increased synthesis of muscle proteins, resulting in a higher meat percentage. The aim of this experiment was to evaluate the effects of compensatory weight gains on meat quality of pigs, during the growing and finishing phases. Forty barrows, Landrace X Large White, with an initial weight averaged in 30.59±5.96 kg, were studied. The experimental design consisted of randomized blocks, 4 treatments and 5 blocks, according to the initial weight. The treatments were: T1 control, with ad libitum feeding during the whole experimental period; T2 20% of food restriction related to the control group, beginning with an average weight of 30 kg, during 21 days; T3 20% of food restriction related to the control group, beginning with an average weight of 50 kg, during 21 days; T4 20% of food restriction related to the control group, beginning with an average weight of 70 kg, during 21 days. The weight at slaughter averaged was 117.32±6.76 kg. The initial and final pH´s, color traits, marbling, drip loss, thawing and cooking loss, tenderness, sensorial analysis, myofibrillar fragmentation index and chemical analysis were measured in Longissimus dorsi muscle and the diameter of muscle fibers was measured in Semitendinosus muscle. Meat quality parameters were not affected by treatment and the diameters of muscle fibers of restricted animals followed by compensatory growth didnt show alteration. Thus, the time and intensity of food restriction studied during this experiment didnt show any alterations regarding to physical, chemical and sensorial meat characteristics.
