Extração de oleos vegetais utilizando-se enzimas no pre-tratamento das sementes

RESUMO

Sunflower seed and brazil nut seed were chemically characterized by the centesimal composition of the seed, and them were submitted to several oil extractions tests, using enzymes in the pretreatment phase, in order to stablish quality parameters of these oils extracted without previous pre heating conditions. Comercial celulolitic and pectinolitic enzymes were utilized for the pretreatment of the above seeds, and their oils were extracted in a mini press, from brazilian manufacturer, Ecirtec, with nominal throughput of 40 kg Ih. The efects of enzymes were tested individually and combined prior to the oil extraction. The oil yields were compared, with and without the enzyme pretreatment and the oils and cakes were chemically analysed. The oils were submitted to many identification quality analysis and, also tocoferol contents and fatty acid composition. The stability index was evaluated by the determination of the induction period using the Rancimat equipment. This results were correlated with the tocopherol content, since they are considered to be natural antioxidants.
