RESUMO

This work reports a theoretical and experimental study of the drying kinetics of banana fruit "Nanicão" under different air drying conditions. The work describes the design details of an experimental system which allows a precise control of air temperature and relative humidity and has an automatic acquisition system. Besides these former parameters, the system also registers automatically the sample weight and fruit temperature during the processoThe system, new in Brazil and similar to those used in developed countries, has shown.a good performance for its purpose. The experimental data from moisture content variation during drying were treated according to the liquid diffusion model considering a constant diffusion coefficient and including important fenomena during fruit drying such as the shrinkage and the convective effects of the air on fruit surface. The diffusion and convective coefficients were determined by fitting the model to the experimental data using the minimization of the sum of the residuaIs squares in successive trials. The results demonstrate that the investigated fenomena showed a clear influence on the calculated results improving the adjustment of the models to the experimental data. The convective effects were more evident at the begining of the process whereas the shrinkage influence was observed all over the drying period, especially at the end of the period
