RESUMO

This study examined in vitro the action of alkaline and acid detergents on soil deposited in the heating section of plate heat exchangers during milk pasteurization. The influence of the physico-chemical parameters, such as pH and temperature, as well as reaction time on the deposits dispersion was verified. The soil deposits used in the experiments were obtained through assays carried out in pilot and industrial plants. It was noted that the milk characteristics (acidity) and the operational conditions utilized (temperature and homogenization) influence the rate of soiling and the deposit composition. The deposits obtained in the industrial plant assays were composed of protein (43,5%), fat (43,0%) and minerals (7,5%).
