Buyers demand for better quality food products and better informed consumers are requiring food companys actions to coupe with this new market desire. In this context, small food businesses, usually are unable to meet those quality perspectives, and may be prone to lose space to larger enterprises. Micro and small food businesses are important job positions providers and income generation for the country. They are also efficient in contributing to economical decentralization and growth. In this work the objectives were to evaluate the difficulties in implementing food safety assurance systems in Brazilian fruit pulps small producers and provide suggestions to overcome them. In a first stage it was identified micro and small fruit pulps producers enterprises in Bahia, Espírito Santo, Minas Gerais and Rio de Janeiro States. Following this stage a questionnaire was applied with quality control chair professional in each firm, on questions related to firm identification and organization. There were also questions on technical personnel knowledge and awareness of sanitary food safety assurance and regulatory requirements attendance. Results show a considerable proportion of interviewed enterprises not even knowing food safety basic tools, such as Standard Sanitizing Operating Procedures and Good Manufacturing Practices, which are mandatory to food industry by Brazilian regulatory norms. In most of interviewed industries there are no information on objectives and advantages of having food safety system implemented. Another point observed was a lack of technical knowledge on part of the professional person responsible for food processing, occurring in 43% of total interviewed firms. Proposal to improve food safety systems implementation on fruit pulp small producers were formulated. They include food handlers training, facilities improvement, documentation, servicing, raw material acquisition, consumer attendance service, quality control, equipment and accessories utilization and use of adequate clothing.
