RESUMO

On a domestic scale, beans are usually soaked before cooking. This practice results in changes in the composition of the beans, for example, in the factors responsible for flatulence and in the nutritive value of the beans. The effect of soaking and of domestic preparation on the chemical composition of beans was studied, specificallyon the contents of total sugars, reducing and non-reducing sugars, starch and raflinose-type oligosaccharides, using different treatments of the common bean (Phaseolus vulgaris, L.), "IAC-Carioca" cultivar, also ana1ysingthe residual soaking water unabsorbed by the beans. The different treatments were: raw bean (FC), freeze-dried bean cooked without pre-soaking (FCSM), freeze-dried bean cooked without the residual soaking water (FCSAM), freeze-dried bean cooked in the residual soaking water (FCCAM) and the residual soaking water (AM). The beans were soaked at room temperature for a period of 16 hours in the proportion of 3:1 (water:beans), and then cooked in a domestic pressure cooker for 40 minutes afier the air exhaustion (water steam flux continuous). The beans were then frozen, freeze-dried and ground, to give a dry flour. The diet efliciency quotient (QED) and net protein efliciency ratio (NPR) were studied by a biological assay using weaned male Wistar rats. Five treatments were applied with experimental isocaloric (350.9+87.9 kcal/100g) and isoproteic (12.0 + 0.5%)diets, whose protein sources were respectively: FCSM, FCSAM, FCCAM, control casein diet (CC), and casein plus the total soluble solids found in the residual soaking water (CSS) plus a protein-free diet (AP) used to correct the results ...Note: The complete abstract is available with the full electronic digital thesis or dissertations.
