Desenvolvimento e avaliação de uma proposta metodológica de implantação da lanchonete escolar saudável

RESUMO

Introduction: School commercial cafeterias have an important role for the promotion of healthy eating habits in the school environment. Despite that, a number of researches have shown that cafeterias have contributed in a not much expressive way for the promotion of healthy eating habits in schools. In that sense, and considering the concern of public administration before the indices of obesity and other nutritional disorders, the relevance of developing methodologies for implementing a healthy school cafeteria is underscored. Objective: To develop and assess the implementation of a healthy school cafeteria in schools in the Federal District. Methodology: A capacity-building course and two follow-up meetings were held with owners of cafeterias in public and private schools, and we assessed the implementation of the Ten Steps of Healthy School Cafeteria and the profile of school cafeteria functioning before the course, and 6 months and 2 years after the course. For assessing foods and preparations made available in cafeterias, we created a classification system based on the Food and Drug Administration classification, categorizing them into less healthy and healthier. Results: Thirty-five owners of school cafeterias went through capacity-building courses, participating in follow-up meetings throughout 2006in average eight owners. We observed that 55.6% of participants have completed only primary education. There was greater application of the Ten Steps of Healthy School Cafeteria and wider offering of snacks considered healthier from the first to the second follow-up meeting. After one year without followup, the third assessment showed that the application of the Ten Steps and the offering of healthier snacks did not maintain the same pattern. The increase in contact with other cafeterias interested in developing a healthier school cafeteria was statistically significant (p=0.002). Among foods considered healthier, fruit salad, baked snack, cake and yoghurt had the greater percentages of offering in the first three assessment meetings. For the 4-8 year old age bracket, the most and the least healthy foods were respectively the fruit salad and the flaky crispy snack; and, for the 9-13 year old age bracket, the elaborate hamburger and the flaky crispy snack. Conclusion: The capacity-building course presented positive results in the implementation of healthy cafeterias, principally in short term; however, the follow-up process during one year for this public was not enough for ensuring the sustainability of actions necessary to maintaining school cafeterias healthy. In order to achieve xi that, the involvement of the school community, the systematic follow-up of the healthy school cafeteria implementation process, and the development of a norm that stimulates and supports the school cafeteria owner and the school community in this process are fundamental.
