RESUMO

As part of the systematic study of the process of acetylation of saccharides aiming to obtain products of industrial interests, we did tests with monosaccharides (glucose and fructose), disaccharides (sucrose). The sucrose composing abundant raw material deserves special attention as reagent acetylation of departure for a homogeneous environment. In the presence of soluble catalysts, sodium acetate and sodium hydroxide and the agent of acetylation, acetic anhydride. As a main product of the reactions of acetylation of sucrose, the octacetate sucrose, possessor of property characteristics, indicating various applications. The octacetate sucrose is used both in the construction of layers of glass or incorporated into the synthetic resins such as the octacetate cellulose, polymerise as methyl methacrylate, and acetate polivinille, and among other uses for the octacetate sucrose, it prepares a octacetate mixture of sucrose, glucose and pentacetate of tetracetate of fructose produced the catalytic acetylation of sucrose reversed, this mixture has very sour taste, so as the property has been suggested the usage as a substitute for sour and denatured alcohol, having been shown absolutely harmless to humans, other applications show as one of the ingredients of the cleaning agents (detergents) and a small amount composing insecticides. Aiming to quantify the behavior of these groups of kinetic reactions in reactor mixed with reflux at atmospheric pressure, giving chances of kinetic model based on specific mechanisms of catalytic processes homogeneous. Considering the importance of sucrose polyester with the possible industrial applications: It was studied the synthesis of sucrose polyester using traditional homogeneous catalysts, sodium acetate, assessing the influence of factors in the synthesis of the process, with the development of kinetic modeling of the process of acetylation
