RESUMO

This dissertation paper is divided into four studies, all of them concerned with the trade of goat milk products and non-bovine milk products. The first study aimed to identify the goat milk products offered to consumers in the retail of Porto Alegre, capital of Rio Grande do Sul state, Brazil, as well as to verify the availability and price variation of these products throughout a whole year. There were identified 13 products in 14 points of sale: UHT milk (whole, low-fat and with soybeans extract), powdered milk, yogurt and eight types of cheese. It was concluded that in spite of the great variety of goat milk products in Brazil, the Porto Alegre consumer has access to a narrow range of products. These products still lack a constant offer in many of the visited places. The second study assessed the acceptance of goat Gouda cheese through the use of two tools: affective sensory test and a purchase intention test, with a non-trained panel of 34 analysts. It was verified that the median grade of acceptance to goat Gouda cheese was 4 (I liked) and the acceptance index reached 84%. The analysis of buying intention showed a median grade of 4 (probably buy). It was verified that the analysts would either probably buy (38.2%) or definitely buy (35.3%) the cheese. These tests suggest that goat cheese has potential to both conquer new consumers and please different tastes. The third study attempted to identify the behavior of Brazilian consumer of goat milk products with the aid of an online questionnaire. The questionnaire was answered by 149 people who, at least sometimes along the year, are used to buy some goat milk product. Brazilian consumers buy fluid goat milk mainly because it is healthy. On the other hand, they consume goat milk derivatives because they taste good. Most of Brazilian consumers are not fully satisfied with the offer of goat milk. The four study aimed at identifying the types of non-bovine milk products and their origin (goat, sheep or buffalo), as well at evaluating the characteristics of the consumers who buy these products. It was also verified the frequency of cow milk consumption. It was made an Internet survey with 636 respondents. The most mentioned non-bovine milk product is cheese, followed by milk and yogurt. The most mentioned species is goat, followed by buffalo and sheep. The consumers with the highest probability of having already consumed these kinds of products are people above 45 years old, with monthly earnings above three minimum salaries and at least a college degree. People who eat cow cheese on a daily basis show that they have already consumed milk products from other species. Taken as a whole, the four studies reveal peculiarities of goat milk products consumption and suggest a still unexplored commercial potential of these products.
