RESUMO

In todays globalized world, tourism increasingly occupies a considerable space in the economical dialogues, first and foremost for being a diversified productive activity with elevated opportunity for generating employment, income and currency in addition to the capability of bringing people together. With the intent of competing in the international scenario, one of the clear challenges confronted is the enhancement in the quality of touristic services rendered. Instituto de Hospitalidade (IH), foreseeing the touristic momentum and aiming at contributing to overcome this challenge, lead the way in 2000, imple menting the National Professional Certification Program for the tourism industry. Assess the contributions of this program for the increase in qualification and competitiveness of professionals and entrepreneurs of the bar and restaurant segment of Salvador-BA constitutes the main objective of these studies. The choice of this specific segment for the study is based on the food service sector representating approximately 53% of all professionals employed by the tourism sector. The model of analysis elaborated to support this research is sustained by the concepts of competency and certification. By means of specific indicators, the reactions and perceptions of the business owners and professionals have been analyzed linked to the contribution of the program in terms of qualification, competitiveness and personal evaluation. The exploratory research, survey, utilized a random sample of professionals and business owners who participated of the Certification Program in 2004. The data collected in the research made evident the positive perception in regard to the contributions of the program to the increase of qualification and competitiveness of touristic services.
