RESUMO

Accumulate evidence that the qualitative characteristics of the diet are important in defining the health status of the general population. The increasing prevalence of obesity and chronic diseases it is perceived increasingly important to study the contribution of this factor in worker health. Relationship between chronic diseases and body fat accumulation has also been established. Several studies have been conducted to portray the nutritional profile of the worker, however, there is little research on the profile of those who work night shift and its implications for health. Such information is rare among health carers themselves. In Ceará found no study of this nature. The objective of this study was to analyze the profile of food and nutrition nurses. This is a cross-sectional study, conducted in the Hospital Heart and Lung Messejana in Fortaleza. The methods used were surveys and anthropometric alimentar. The anthropometric measurements were selected to body mass index, waist / hip and waist circumference for age, using the cutoffs recommended by the World Health Organization. To record the data was used food recall 24 hours applied for three non-consecutive days including a weekend. The calculation of consumption of nutrients and calories was achieved through a software lab Nutritional Assessment of the State University of Ceará. To examine the adequacy of intake were used to the recommendations of DRIS, published by the Institute of Medicine. The data were processed with statistical program Predctive Analitics Software for Windows - SPSS, version 19.0. The anthropometric survey, through the variables BMI, waist-hip ratio and waist circumference, characterizes the majority of working with overweight and obesity was related statistical difference between the increase of these variables with increasing age (p <0.001). The dietary survey revealed a percentage of women with intake below the AMDR for carbohydrates (25.60%) above the AMDR for fat (15.60%) and a low prevalence of inadequacy for protein (0.6%). The analysis of micronutrients was recorded high percentages of inadequacy for niacin (33.75%), thiamine (64.38%), riboflavin (52.50%) and phosphorus (13.13%). There were no statistical associations between the percentage of inadequate food intake with anthropometric variables (p>0.05), as well as no significant difference between the work shifts (p>0.05). The results focus that the risk of consumption of micro and macronutrientes between the workers of nursing is worrying. More researches necessary saints for deepen the matter, while correcting actions that improve the quality of life of that category should be implemented.
