RESUMO

The aim of this work was to validate the INCAF - Inquérito de Consumo Familiar method in individuais aged 19 or more, to predict their food consumption, regarding to energy, proteins, calcium, and iron levels in Campinas, São Paulo State, Brazil. This method was proposed in 1996 by a researcher group coordinated by Galeazzi. It was used a Semiquantitative Individual Food Frequency Questionnaire as a standard and a data base named Estudo Multicêntrico on Consumption of Alimentos-EMCA/1996-NEPA-UNICAMP. This study followed the Fundação Instituto de Geografia e Estatística-IBGEmethodological precedures.A subsample from Inquérito de Consumo Alimentar Individual-ICAIwas used as well. The study included three phases: exploratory analysis of validation, development of statistical models (n = 123 = 75 famílies), and validation of the generated models (n = 15 = 9 families). On the first phase, data were compared in two groups: per capita consumption of nutrients and nutritional adequacy, using arithmetic mean, standard deviation, confidence interval(a = 0,1), intervaI( qui test(a = 0,1), correlation (coefficient of Pearson alfa = 0,05) and graphic analysis. Consumed food contribuition on energy suplly and nutrients analysed were compared too, besides the sensitivity, especificity and predictive value. On second phase, stepwise regression method (p <0,05), was used by selecting socioeconomicand nutritional adequacy by INCAF as predictors of the dependent variables nutritional adequacy by QFCAs. Two models were generated for each analyzed element, a simple and an amplífied. The latter should necessarily contain the food consumption variable. In the first stage protein consumption mean was the same in the two methods for t test(a=0,1). ... Note: The complete abstract is available with the full electronic digital thesis or dissertations
