RESUMO

The physiological quality and the fungal incidences were evaluated in bean seeds of the cultivar IAC Carioca ETÉ, hermetically stored in aluminium packets with four moisture contents (10.2; 13.1; 16.2; 18.5%) and at four temperatures (25, 30, 35, 40°C). Seed moisture content was determined at 105°C±3/24h and at 130°C±3/2h. Water activity was obtained in a DECAGON apparatus, at 25°C±0.3. Germination test was performed in 4x50 seeds. The sanitary condition was evaluated through the blotter test with 20x10 seeds at 20°C±2. The statistical design was completely randomised, in a factorial 6x4x4, with portion subdivided in the time (sampling time, moisture contents and temperatures). The values of AW for 10.2 and 18.5% moisture content were 0.448 and 0.700. Seed moisture content increasing cause a reduction in seed longevity, more pronounced at 16.2 and 18.5%. The temperatures had an additional effect in that reduction. The fungi Penicillium spp. and Aspergillus spp. were predominant in hermetic storage from 35°C, when the incidences were statiscally higher then the other fungi. With the increasing of seed moisture content, the highest incidences of fungi were registered in shorter periods of storage. The increase of the temperature had additional effect in the process. Increased seed moisture contents controlled the incidence of Alternaria spp. at 25 and 30°C; however, in the highest moisture contents, those incidences happened more quickly, always associated with the highest temperatures.
