RESUMO

The evaluation of the protein s quality requires a constant improvement of the used methods for a more accurate determination of their real use. For this reason, the Protein Digestibility-Corrected Amino Acid Score (PDCAAS), through the study with rats is employed for this evaluation, for it counts not only for the chemical score of the amino acid, but also for their digestibility, what makes possible to find the first limiting amino acid. The present study, products containing soy protein was evaluated by the PDCAAS, on two takes of the digestive flow to estimate the amount of nom absorbed amino acid: fecal contents and digested ileal. This evaluation is done by determining the quantity of essential amino acids of the protein being studied, referred to as FAOIWHO hypothetical standard (1990). The hypothesis of the work is that it may be bioavialability similarities between essential amino acids of vegetable and animal sources. The products containing soy protein were tested, where only one (product PS) was fortified with 0,3% of methionine and compared to a diet based on casein (commercial, sodium caseinate, calcium caseinate) the diets were administered to five groups made up of 10 Wistar male Weaning rats. A sixth group was feed with a protein diet to estimate endogenous losses of nitrogen.
