RESUMO

Sugar cane liquor, when maturated, presents improvement in taste characteristics and aroma, becoming sofier and less dry. Thus, it can be advantageous to package the product in oxygen-permeable bottles, favoring the ageing inside the packaging. The objective of this work was to study the aging of the sugar cane liquor packaged in plastic bottles - polypropylene (PP), polyethylene terephthalate (PET), polyvinyl chloride (PVCb and PVCc) - and in glass bottles, concerning the effect of the packaging on the beverage quality. The sugar cane liquor, obtained in local market, was packed in plastic bottles and stored at room temperature and 35°C. During storage it was subjected to the following tests: alcoholic degree; total density; volatile acidity and fixed acidity; acetaldehyde, ethyl acetate, methanol, npropyl, isobutyl, isoamyl alcohol contents; and flavor and aroma. The packages were characterized in terms of weight, volumetric capacity, dimensions, thickness distribution, sealing integrity, vertical load resistance, oxygen, water vapor and ethanol permeability. The alcoholic degree of the cane liquor in PP bottles decreased with storage time, while in PET, PVCb and PVCc bottles, it increased. In the glass bottles, there was not significant difference of alcoholic degree with storage time. The total acidity tended to increase, including in the glass bottles, due to the volatile acidity, since the fixed acidity kept constant.
