RESUMO
This research evaluated the stability and estimated the shelf-life of the coconut water marketed in plastic bottles of polyethylene terephthalate (PET), frozen and refrigerated. It evaluated the effect of the storage temperature over the quality and the shelf life of the coconut water. The evaluation of the stability was done by microbiological, physical-chemical and sensory analysis of the product weekly during the storage period, at cyclic conditions (-S to -18°C, or 23 to -4°F) and in the isothermal conditions of O, S, 10, 1S, 20 and 2SoC. Based on the kinetics of the quality loss and on the microbial count (growth), it estimated the shelf-life of the coconut water as a function of the temperature. For the refrigerated product, the most important factor about stability was the microbiological, although for the frozen, it was the physical-chemical.
