RESUMO

The implementation of the nutrition education in medicaI courses has been discussed for about 30 years, without much success in reaching a consensus to carry out effectively this purpose. The objective of this study is to contribute to this discussion by presenting a pedagogical proposal developed from a research done with surgical resident doctors from State University of Campinas. The research was carried out in two stages. In the first stage, data conceming nutrition education during graduation was collected, involving 55 residents from different colleges, resulting on a descriptive analysis. In the second stage, 15 residents were selected to be interviewed. The method applied at this stage was content analysis. In the fjrst stage, it was found that 87.3% of the residents had acquired some knowledge of nutrition during graduation, however, the knowledge received was considered insufficient by 79,2%. In the second stage, three categories of analysis were considered: quality evaluation of the education received during graduation, performance in clinical practice related to the approach of nutritional problems, and quality aspects of eating habits. The conclusion was that the education given was defective and, therefore, unsatisfactory, forming a gap between theory and practice. The pedagogical proposals show the need of a problem-based approach in accordance with Paulo Freire s concept and Edgar Morin s paradigms of complexity. The education should integrate the technical aspect with the sociological approach which would allow contextualizing discussion and interdisciplinary development
