Aiming to determine some physical â chemical properties and the effects of soluble fibers citric pectin and guar gum on the lipid fractions of wistar ratsâ blood and liver consuming diets containing cholesterol, 36 animals were utilized, which were allotted to a randomized design and divided into six groups which made up the standard diet. Over a five-day period, the animals were given standard diets for them to adapt to the experiment. After that period, the animals were fed different diets for 58 days, composed of 10 and 15% of pectin and 1% of cholesterol and two control groups, one with 5% of cellulose and 1% of cholesterol and the other with 5% of cellulose and without any cholesterol. After the 58 days feeding experimental diets, the animals were slaughtered and blood was collected for analysis of total cholesterol, HDL, LDL, VLDL and triacylglycerol and liver for the analyses of total glycerol, triacylglycerol and total lipids. Concerning pH, only pectin presented acidic character and as regards water-absorbing capacity the values for guar gum and carboximethylcellulose were equal (p<0.05). Cellulose showed a value statistically inferior to the other fibers for being an insoluble fiber. The average value of moisture for guar gum proved superior as compared with the values of the other fibers. The rats fed the purified fibers citric pectin and guar gum, 10 and 15% presented a significant reduction of serum cholesterol relative to the control group containing 1% of cholesterol. HDL levels proved smaller in the treatments with 10 and 15% of the purified fibers, citric pectin and guar gum relative to the control containing cholesterol. However, the triacylglycerol levels did not show significant statistic difference among the treatments. It follows that ,in this experiment, that the lipid profile may be improved with addition in the diet of the soluble fibers citric pectin and guar gum.
