RESUMO
This research was carried out to determine some physical and physiological properties of plum (Prunus domestic L.) cv. Horvin, during the pre-harvests period, whose knowledge is indispensable to determine the appropriate harvest time, which will allow reducing the losses of this product during the harvest, due to his deficient handling. The study allowed determining that the plum cv. Horvin must be harvest 99 days after flowering. The fruit in this stage presented values for flesh firmness of 50.66 N, titratable acid of 0.78%, Soluble Solids of 11.8 ºBrix, respiratory rate of 19.64 mg CO2 kg-1 h-1 and relation (SS/AT) of 15.25. At harvest time the fruit present size about of 30.59 mm, weight of 22.44 g, sphericity and roundness of 0.84 and 0.85 respectively, real density 1095.65 kg.m-3, apparent density of 572.70 kg.m-3, porosity of 49.89% and superficial area of 32.79 cm².
