RESUMO

This dissertation includes a review over the benefit of soybean in human health and a comparative analysis between organic and no organic soybean. The review studies the history in Brazil, its importance as food and functional food, with comparisons between soybean and other type of foods. It describe also about isoflavones, its influence in the soybean plant and benefits to human health. It has been verified positive influence in degenerative diseases as cancer, benefits in circulatory system, shutting down cholesterol triglicerids level, as treatment to climaterium, and other functions. The work has been developed to identify differences in centesimal composition, mineral and isoflavone content between organic and no organic soybean, with most samples collected in Paraná State, all BR-36 cultivar. Has been analyzed oil, protein, carbohydrates, ash, minerals (P, K, Ca, S, Mg, Zn, Cu, Fe, Mn, B and Mo). There was a difference betwen sistem cultivation. Organic sistem had smaler concentratior of protein (45,14 and 43,58) and bigger in strash (20,20 and 22,16). It had also smaler concentratios in the folowin isoflavones: genistin, malonil genistin e daidzin. The concentration of minerals for the macroelements (mg g-1) showed smaller concentratios of P (4,59 and 4,05), K (16,41 and 13,86) and greater concentration in Ca (3,31 and 2,39). For the microelements (mg g-1) the organic sistem had better results in Zn (39,34 and 3636,78), Mn (29,42 and 23,05) and smaller in Fe (133,51 and 103,2) and Cu (15,38 and 12,56).
