RESUMO

This study had by purpose to evaluate which are the factors - and its intensity - related to the gastronomy that stimulate the tourist to frequent certain tourist destination or influence him/her in the choice of certain hotel. The research, enclosing the period of 2006/2007, had as local of its accomplishment the city of Balneário de Camboriú, in the State of Santa Catarina, known as the main tourist center of the South Region of the country. Another source of the study consisted of the evaluation of the form as the managers of the local hostelry consider the sector of food and drinks of its enterprises. It was also searched to identify as the gastronomy is seen in relation to the culture of the locality: does the tourist see in the gastronomy a form to know the culture of the place that he/she visits? Is this fact significant in the choice of a destination or a hotel? The answers to these questions had been gotten with the application of an instrument of research to 400 people that frequent the Central beach of Balneário de Camboriú and to the managers of 12 Hotels of the city. The results had been presented in the form of a semantics scale of the factors of influence pointed out by the tourists, related to what the managers of the local hostelry believe. It was also carried out a grouping of tourist by characteristics related to the aspects of the food, what allowed the elaboration of the concepts of Gourmet Customer, Appreciative Customer and Feeding Customer.
